Many varieties of tomatoes are grown in Italy.
The most widespread is San Marzano. Tomato is a food low in calories (only 17 kcal / 100 g.) It is rich in antioxidant substances important for health, such as lycopene, beta-carotene (vitamin A) and vitamin C.
The only mineral present in a fair amount is potassium. To become dry, tomatoes must be kept in full sun and possibly in a ventilated place for about ten days.
